Frozen Cappuccino Bars

Stage 1


Ingredients
1 (13 ounce) box whole graham crackers (may not use all)
16 ounces cream cheese, softened
3 1/2 cups cold milk
3 (3 1/2 ounce) packages instant chocolate pudding mix
1 tablespoon instant coffee
1/4 teaspoon ground cinnamon
8 ounces whipped topping, thawed
chocolate sprinkles or grated semisweet chocolate bar


Procedure
Arrange graham crackers in the bottom of a 13 x 9 pan, breaking crackers to fit if necessary.

Beat cream cheese in a large bowl with an electric mixer on low speed until smooth.

Beat in 1 cup of the milk.

Add remaining milk, pudding mixes, instant coffee and cinnamon.

Beat 1 to 2 minutes or until well blended (mixture will be thick).

Gently stir in 2 cups of whipped topping.

Spread 1/2 of the pudding mixture over the crackers in pan.

Arrange more crackers over the pudding or cover the pudding with crushed graham crackers.

Top with remaining pudding mixture.

Cover with remaining whipped topping.

Sprinkle with grated chocolate or sprinkles.
Freeze 3 hours or overnight. Let sit out of freezer for 20-30 minutes before serving.

Watermelon Lemonade with Kiwi Splash 

Stage 1



Ingredients
4 Kiwi, peeled and cut into fourths
1 Tbsp  sugar
8 Cups  cubed seedless watermelon
2 Cans (12 ounces each) frozen lemonade concentrate
4 Cups water


Procedure
Place kiwifruit and sugar in blender. Cover and blend on medium speed just until smooth. Freeze 1 to 2 hours or until firm.

Place watermelon in blender or food processor (blender will be full until blended). Cover and blend on medium speed until smooth. Place frozen lemonade concentrate and water in large pitcher. Add watermelon mixture; mix well.

Pour watermelon lemonade into glasses. Spoon dollop of frozen kiwifruit on top. Serve immediately.

Patriotic Ice Cream Cupcakes Recipe



These red, white & blue cupcakes are perfect for your next Memorial Day or Fourth of July get-together. Red velvet cupcakes are layered with blue ice cream and frozen whipped cream topping—a festive way to turn cake and ice cream into a hand-held dessert!



Stage 1

Ingredients
1 package red velvet cake mix (regular size)
1 quart vanilla ice cream, softened
3 cups heavy whipping cream
1-1/2 cups marshmallow creme
Red, white and blue sprinkles
Blue colored sugar


Procedure
Prepare cake mix batter according to package directions for cupcakes.

Fill paper-lined muffin cups half full. Bake at 350° for 11-14 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Working quickly, spread ice cream over cupcakes. Freeze for at least 1 hour.

In a large bowl, combine cream and marshmallow creme; beat until stiff peaks form. Pipe over cupcakes; decorate with sprinkles and colored sugar. Freeze for 4 hours or until firm.
